Level it off the flour with the straight side of a knife or metal spatula. Do not pack flour by tapping the cup when measuring. 3. Use the amount of liquid and flour in the bread recipe provided as a guide. You can experiment with other favorite yeast bread recipes. Remember, this mixer can only make one loaf of bread at a time. Divide larger recipes in half. Basic White Bread 2.cup milk 1 teaspoon salt 3 3 tablespoons butter 1 package active dry yeast or margarine cup warm water (110-115°F.) 2 tablespoons sugar 31.3-32.3 cups all-purpose flour 1. Grease a 21.2-quart (2.4 L) bowl and a 9 x 5 x 3-inch (23 cm x 13 cm x 8 cm) loaf pan; set aside. 2. Heat milk; add butter, sugar and salt. Stir thoroughly and cool to lukewarm (100°-115°F / 46°-62°C.). 3. Dissolve yeast in warm water in large mixing bowl for 5 minutes. 4. Add 11.3 cups flour and lukewarm milk mixture to dissolved yeast. Mix at Speed 1 for 1 minute; then Speed 5 for 1 minute. Scrap down sides of bowl as necessary. 5. Add 1-cup flour; continue beating at Speed 5 for 3 minutes, scraping down sides of bowl frequently. 6. Reduce to Speed 2, and gradually add 1-cup flour. Knead dough for 3 to 5 minutes. After 3 minutes of kneading, touch dough with fingertips. If dough is very sticky, add remaining 1.3-cup flour, and continue kneading for 1 to 2 minutes, or until flour is blended. (The additional 1.3-cup flour may not be needed.) 7. Shape dough into ball. Place in greased bowl, turning to grease top. Cover with towel, and let rise until doubled in size — about 45 to 60 minutes. 8. Punch down; cover and let rise again for about 30 minutes. 9. Punch down; form into smooth ball. Cover and let rest 15 minutes. 10. Roll out on floured board, and roll up into tight loaf. Fold ends under bottom of loaf. Place into greased loaf pan. Cover and let rise until doubled in size, about 30 minutes. 11. Bake in preheated 375°F (191°C) oven for 35 to 40 minutes, or until bread sounds hollow when tapped on the side of the pan.
